Creamy Mixed Berry Semifreddo

Over the past few years, I’ve noticed recipes for semifreddo, and I have been intrigued. What you may ask is semifreddo! Well, it is a frozen dessert, similar not quite the same as ice cream or mousse. In Italian it means half-cold or half-frozen. It’s less cold than ice cream, lighter and melts on your tongue very quickly. It is just like you ate the lightest concoction imaginable. So yummy! Now that I have discovered the how easy and tasty semifreddo is, I will be experimenting with more flavors.

Since I had strawberries, blueberries, raspberries, and blackberries I decided to make a creamy mixed berry version. Feel free to use a single berry or more than one. There are a few steps and wait time before you can enjoy the fruits of your labor, but I guarantee you will not be disappointed with the results.  This recipe is in three steps, the semifreddo, first sauce, and final sauce. Linda and Alex stopped by and were treated to a sample. Here are their comments: “so good”, “delicious”, and “creamy”. So, treat your mother and anyone else to a simple but wonderful dessert.

Line an 8” x 4” loaf pan with plastic wrap, overhanging the edges.

Mixed Berry Sauce #1

1 1/2 cups fresh chopped berries, strawberry, blueberry, raspberry, blackberry

1/3 cup sugar

1tespoon lemon juice

Zest from one lemon

Directions: in a small pot add the berries, sugar, lemon zest and juice. Bring to a boil, squish the berries with a potato masher, or wooden spoon. Cook 3 to 5 minutes, stirring constantly. Remove to a clean bowl and let cool, then refrigerate until cold. Inpatient! Place in the freezer for 10 to 15 minutes.

Semifreddo:

1 1/2 cups of heavy cream

1/2 cup Greek Yogurt (Whole)

1/2 teaspoon vanilla,

Directions: In a medium bowl, whip the cream until stiff, fold in the yogurt, vanilla, and cold berry sauce until the mixture is incorporated. Pour into the prepared pan and cover with plastic wrap. Freeze for at least 4 to 5 hours.

Mixed Berry Sauce #2 Topping

1 cup chopped mixed berries.

2 – 3 tablespoons confectionaries’ sugar

1 teaspoon lemon juice

Directions: In a blender add the berries, and lemon juice. Pour into a small pot and add confectionaries’ sugar, cook on low for approximately 5 minutes until thickened. Let cool and serve over the semifreddo.
